Maril Coffee was started by lovers of coffee that firmly believe in ecologically and ethically grown coffee. We believe in Fair Trade and fair wages for our employees and partner farmers. Maril Coffee is 100% Colombian. Grown in the beautiful mountains of Yolombo, Antioquia. It’s picked carefully with the loving hands of our employees. Our coffee is grown at an ideal altitude of 1600 to 1700 meters above sea level, and under the shades of fruit trees. After it’s picked, it’s processed and dried using primarily the washed and red honey methods. Once dried to ideal conditions, it’s roasted by the best roasters in the country. Our coffee is strictly quality controlled to provide excellence in taste with fruity and citrusy flavors as well as notes of dark chocolate and cacao. Our specialty
We specialize in the Red Honey Process. With this method, the best and ripe coffee beans are picked first, then they are fermented anaerobically using our proprietary process. Once fermented for the required time, the fruit around the bean is removed, but a portion of the fruit is left on the bean, then the bean is sun dried. This process of leaving a portion of the fruit on the bean while it dries creates an enzyme reaction that gives our coffee different notes such as citrus and dark chocolate. Once the bean is dried to a certain humidity level, it’s called pergamino, to green coffee from pergamino, the cover on the bean is removed. Now the coffee is ready to be roasted. Roasting has an infinite number of profiles and picking the right profile to roast the coffee is critical. Our coffee is roasted to medium roast level.
